Buttermilk powder is a dried milk product with a fat content ranging from 4 to 9% and a maximum water content of 4%. It is a derivative of butter making, wherein liquid buttermilk is released during the churning of cream into butter. This yellow liquid is then gently spray-dried to create buttermilk powder.
